On my Mind….Focaccia First

Rosemary and Garlic Focaccia


This was my first try at a foccacia and i am really pleased with how it turned out. I originally went searching for a recipe after Miss Teen said they now had focaccia and turkish bread at the school canteen and could we buy some for home as she liked it! Well, i'm not paying $5 a loaf for ‘specialty' breads so thought it was time to give something new a try!

I just used a basic focaccia dough recipe but also warmed some olive oil and added garlic and rosemary from the garden which i then brushed over the top before putting in  the oven…..the little indents held the yummy oil and made a crunchy, crispy, fragrant loaf. I really must get more creative with breadmaking….it's not hard, i just need to step out of the rut!

Do you have a favourite breadmaking recipe on your blog?….i would love you to leave a link to share or comment if you do. Right now i would like to find a recipe for turkish bread….it is a bit heavy for me but Miss Teen would like to give it a try for herself and i'm all for encouraging cooking!

Anyway, this is the recipe i used (with a few of my own modifications as all cooks do!)

Focaccia
250 ml water
2 tblsp olive oil
1 teas salt
2 teas sugar
3 cups bread flour
21/4 teas yeast
I use the breadmaker to do the mixing and kneading or it just doesn't happen…some cheats are worth it i think when you have a busy family to tend to!
Then i pressed dough into a greased lamington tin, covered loosely with greased cling wrap and left until it doubled in size or around 40 mins. Then i removed plastic, made indents over the surface with my knuckles and brushed/poured over my garlic and rosmary oil and sprinkled with lots of sea salt.
Into a 200 degree oven for 30-40 mins or until golden brown. Yummmo!
Didn't last long but was a lovely addition to plain old spaghetti bolognaise and salad last night.
Now breadmaking is on my mind so please share any links or fav recipes you have on your blog….i know you are just bursting with a wonderful recipe!

    Hi Jode, thanks for stopping by my blog today. That focaccia looks yummo and I’ve searched high and low for a turkish bread recipe, so I’ll have to keep a watch to see if you find one.

    A couple of our favourite bread recipes are Sun-dried Tomato, Basil and Parmesan, and Italian herb bread, I’ll have to drag out the recipes for you!

    My 25 year old son loves Focaccia bread with jalapeno peppers and sun dried tomatoes.

    Mmmmm! I make Foccacia with rosemary, olive oil, and sea salt. Adding garlic sounds great, too.
