We don't tend to do much for Valentine's day in the way of presents but we did show some family love in a few little ways……
A family trip to the beach on Sunday…….
Unfortunately this is how poor Ruby spent most of the morning…..wasn't impressed and just wanted cuddles…
Tara on the other hand was her usual daredevil self!
Miss Teen and i made pizzas for dinner as it is a family favourite……The recipe for the pizza dough i like to use is so easy (well i do use a breadmaker to make it even easier but hey…i am busy!!!) It makes a good crust and you will get 3 large thin pizzas or 2 thick pan pizzas from this quantity, just halve the recipe if you want a smaller amount.
EASY PIZZA DOUGH
400ml water
2 tablespoons olive oil
2 teaspoons salt
5 cups bread flour
4 teaspoons yeast
Add everything in this order to the bread machine and set to dough setting or equivalent, turn onto floured board when cycle is finished and knead lightly. If you don't have a machine, just knead by hand after mixing ingredients for 10-15 mins and then let rise until it doubles.
Roll and stretch dough out until it fits the trays sizes you have prepared and you have the thickness you want
Add whatever sauce and toppings take your fancy…..i promise we did have some vegetables on here!
Cook in a hot oven for around 20 mins (will depend on your oven and pizza thickness) and enjoy!
I also made another family favourite, Choc Self Saucing Pudding but made it a little valentines special by adding cream and strawberries…mmmmm
Such an easy recipe that i actually remember making when i still lived at home…some favourites just stand the test of time don't they? I also made some banana chocolate heart cakes for lunchbox treats but forgot to take a photo…they went down well though! If you like puddings you have to give this recipe a try!
CHOCOLATE SELF SAUCING PUDDING
Pudding
1 cup SR flour
3/4 cup sugar
1/2 teaspoon salt
2 Tablespoons cocoa
2 Tablespoons melted butter
1/2 cup milk
vanilla essence
1 egg
Sauce
3/4 cup sugar
1 Tablespoon cocoa
1and 3/4 cups hot water
Pudding….Sift all dry ingredients together. Add butter, milk, vanilla and beaten egg. Mix well, place in a greased casserole dish.
Sauce……Mix all sauce ingredients together and pour gently over the pudding mixture.
Bake in a moderate oven for 30-40 minutes and serve with cream, custard or ice-cream.
All enjoyed while smelling my beautiful roses…a gift from his patient self and someone i am very lucky to have in my life!
