Preserving an egg abundance!

Since bringing home our hens last year they have been laying extremely well…almost too well! We just cannot use all the eggs they are delivering us even though we have been giving them away! They are such lovely eggs and i have really noticed a difference cooking with them….but on the weekend i looked at the overflowing basket of eggs yet again and decided it was time to start ‘preserving' them somehow rather than just baking and cooking up a storm of eggy goodies!

Note the size of the one on the end…i imagine that hurt somewhat!
I have been toying with the idea of freezing eggs for awhile now but for some reason have been a little afraid of the concept. After much reading i decided to just jump in and do it (gee i live dangerously don't i?).

I started with quite a bowlful of eggs and decided to go ahead and crack them all….you can freeze the whites and yolks separately which i may do next time but this time i kept them together as that is how i mostly use eggs.

After cracking them into a bowl, simply stir together trying to avoid adding too much air. Some information i read advised adding some salt to help preserve the egg a little better. I added a little as i figured it couldn't hurt!

Then it is just a case of ladling into freezer safe containers….i chose to freeze some in larger portions which i will defrost in the fridge for baking…..And some of the mix into my baby food trays (similar to large ice cubes) which i simply froze and then turned into a large ziplock bag. These trays hold about 3 tablespoons each oval.
Left them to defrost a little too long in the trays hence the mes on the bag as they had gone a little soft!
It seems from my reading that 3 tablespoons of the egg mix is equivalent to 1 egg so this would seem to make things easy for using in cooking and baking. I haven't tried any yet as we still have 3 eggs a day being laid! I shall let you know how they turn out when i next use them.

I kept all the egg shells and washed them well. They have been drying outside and when finished i plan to use them for another activity which i shall share in a later post. What do you do with your eggshells? Do you reuse them?
Our ‘chooks' really have become part of the family now and the twins just love being able to play with them everyday outside…we are thankful that they are such productive pets!!
I'd love to hear if you have any other ideas for preserving an abundant supply of eggs!

    We dry our our eggshells and then use them in crafts (dye them etc or grow sprouts heads). My friend crushes her egg shell up to feed back to the chooks – apparently it makes their eggs better?

    Lovely birds you have, Jode. I enjoyed the picture of your little one in the wading pool with the chickens nearby.

    I often make egg noodles with my extra eggs. They dry so nicely and keep well.

    Thanks for visiting my blog! I think I could learn a lot from yours! I’m pretty non-creative and domestically challenged….so…….looks like you may have me beat in that department. ๐Ÿ™‚ But we twin moms have quite the common bond so none of that other stuff really matters!

    Thanks for the laugh about “living dangerously.” I lived on the edge, too, with my butter-making the other day. We are wild and crazy ๐Ÿ˜‰

    I freeze eggs the same way you do, and just started experimenting with grinding the shells to supplement the chicken’s feed. Excited to see what you’re up to with them.

    Have you cooked with your eggs yet?

    We have soooo many eggs right now, but we tend to sell them or give them away… but I wouldn’t mind having a little stock pile in the freezer for baking as I detest having to buy eggs during the winter when our hens lay less…. though we have 15 layers right now so hoping that will be enough to even see us through winter!

    Just coming back to let everyone know that i have since been defrosting and using the eggs that were frozen and they have been working a treat! Really pleased with them so i would definitely give it a try if you have a big supply of eggs at the moment!

    I have frozen eggs before and loved the end result. We found them extremely cheap at a discount place and couldn’t resist. They are wonderful for making a quick scrambled egg sandwich or burrito and for baking. My mother used to put crushed egg shells and coffee grounds in her plants, but don’t remember quite why =) But I usually just add them to our compost pile. Great blog – so glad I found it!
